Demand for salmon in the U.S. has been reported to have excelled over the past several years. Most conferences, webinars, and presentations continue to tout salmon’s dominance at retail and most foodservice buyers would say it’s a must on their menu.
Salmon supply looks to have been keeping pace with this increased demand thus far. The fresh salmon fillet market saw a 2.4 percent increase this year and on top of that, the frozen salmon fillet market saw a 16.4 percent increase.  |
